What we do not roast
No underdeveloped grassiness. No sharp acidity. Sweetness is not optional.
We buy from farms whose names you already know, then we reject most of what they send us. What survives is quiet: balanced, sweet, complex enough to hold your attention for a whole cup and calm enough that you do not have to pay attention at all.
